PICKLED BLACK OLIVES

INGREDIENTS

- 1 lt filtered water 

- 250 grs dried black olives 

- 1 small white onion (thinly sliced)

- 1/2 yellow chili (thinly sliced) 

- 2 limes (just juice) 

- 1 teaspoon  salt

- Dash of pepper 

- 1 tablespoon extra virgin olive oil

- 4 tablespoons white vinegar

PREPARATION

First, boil 1 liter of water in a pot, when it is boiling add 250 gr of black olives, cook for 15 minutes. Remove and  pass through a strainer to remove the water, set aside to cool down. Meanwhile, add to a bowl 1 white onion washed, peeled and thinly sliced. Now, add the cooked and cool black olives, 1/2 yellow chili thinly sliced, juice of 2 limes, 4 tablespoons white vinegar, 1 teaspoon salt, dash of pepper, 1 tablespoon extra virgin olive oil, mix everything, and it’s ready!!

TIPS

- It is better to leave it to rest for a minimum of 24 hrs in the fridge.

- Reserve in a jar with a tight lid.

- You can serve it with slices of baguette, or crackers.
