INGREDIENTS

- 6 egg yolks 

- 1 egg white 

- 1 can evaporated milk 

- 1 cup white cane sugar 

- 1/4 teaspoon almond essence 

- 1 cup powder sugar 

PREPARATION

First, separate the egg whites of the yolks, we use 6 egg yolks and 1 white egg. Beat a little bit to break the membrane of the eggs. Then, we pass through a colander, don’t use a spoon. In another bowl place 1 can of evaporated milk and 1 cup of white cane sugar, mix everything until you feel the sugar dissolve. Now add the mix of eggs and stir all. Then, put it in the microwave for 3 minutes. Remove and mix with a spoon. Put again in the microwave for 3 minutes more and mix to evaporate the liquid. Return again to the microwave for 2:30 minutes and repeat the process 2:30 minutes more. Finally, put in the microwave for 2 minutes, stir every time you remove from the microwave. Now we have the consistency of scrambled egg, add ¼ teaspoon of almond essence, mix well and pass in a clean and dry bowl. Beat with an electric mixer until it is cool, approximately 3 minutes. Finally, place in the refrigerator for 4 hours. After this time, knead with powdered sugar until you have the texture of a plasticine and don’t stick to our hands. Now you can make some shapes like fruits, balls stuffed balls with a grape, etc. Also, you can paint them with edible dyes. Also, you can use fondant like the typical golden ball.

TIPS

- It’s important to strain the egg yolks of the egg whites so you remove the lumps, don’t use a spoon.

- It’s important to cook in the microwave according to the times mentioned in the recipe and mix very well in every each time.

- You have to refrigerate at least for 4 hours and preferably all night to obtain a more compact pastry.

- When you remove it from the microwave, be careful because the pastry is very hot.

- If you don't have an electrical mixer you can beat with a  wooden spoon, trying to evaporate the liquid of the mix.

- Place maná in a small paper, special for these little sweets and in a cute plate.

- If you don’t have time to make shapes, you can serve in slices and decorate with nuts or pecans.
