AVOCADO ICE CREAM

INGREDIENTS

- 500 gr avocado

- 2 frozen bananas

-  400 ml coconut cream (frozen)

- 2 ½  tablespoons lime  juice 

- 1/2 tablespoon vanilla extract 

- Dash of salt 

IMPLEMENTS

- Freezer safe container

- Electric Mixer

PREPARATION

In a blender place 1 kg of avocado, peeled without seed,  add ½  tablespoon lime  juice, blend at high speed until you obtain a smooth creamy mixture. On the other hand, blend 2 frozen bananas and 1 tablespoon lime juice,  reserve aside. 

With an electric mixer, beat in high speed a whole can of frozen coconut cream and 1 tablespoon lime juice, until it thickens.

Now mix the whipped coconut cream, avocado and bananas pure with a silicone spatula, add 1/2 teaspoon vanilla extract and a dash of salt, blend everything together until the color is uniform. Now, pour in a freezer safe container, level the top and cover tightly, Take it to the freezer overnight or for aprox 8 hrs.  it’s ready!!

TIPS

- It is recommended to use a glass or metal container for the ice cream, as it freezes better .

- Keep in an airtight container , if you don’t have a lid, use plastic film to make it airtight.

 - It is important to freeze  the bowl and mixer blades, it helps the mixture to thicken  better and faster.
