LUCUMA ICE CREAM RECIPE

INGREDIENTS

- 500 gr lucuma

- 2 bananas (sliced and frozen, the night before or at least 4 hrs)

- 2 tablespoons lime juice 

- 1 can cold evaporated milk (overnight freeze)

- 1 teaspoon vanilla 

- ½ teaspoon cinnamon powder 

PREPARATION

First, blend 2 frozen sliced bananas, add 1 tablespoon of lime juice. Stop the blender, scrape the edges with a silicone spatula. Next, add 500 gr lucuma pulp without peel and seeds.  Blend, scrape the edges, blend again and put aside. 

Now, in a very cold electric mixer bowl add 1 can of evaporated milk (freeze the night before), start the mixer and add 1 tablespoon lime juice,  continue beating at high speed until it thickens. Then add our mix of lucuma and bananas, 1 teaspoon vanilla and ½ teaspoon cinnamon powder, blend with a spatula very well until the cream has a uniform color then it’s ready!!

Place the mixture in a freezer safe bowl, tap a little bit to remove large bubbles, cover tightly and freeze overnight or at least 4 hrs minimum.

FREEZER TIME: 4 horas minimum

TIPS

- Tap a little bit of the container over the counter before freezing just to remove large bubbles of air.

- It is better to use a metal or glass container to freeze the ice cream. It keeps the cold better rather than plastic.

- It is important to put the mixer’s bowl and blades in the freezer beforehand so it will help the mixture set easier.

- The milk has to be in the freezer at least 4 hrs before beating it, but preferably overnight.

- Use a freezer safe container to keep the ice cream.

- You can use lúcuma powder instead of the fresh fruit, read the bag for the replacement proportions.

- Use ripe bananas, they are sweeter. Peel, slice and keep in a ziplock bag in the freezer for at least 4 hrs.

- Lime juice avoids darkening of the fruits.
