ICE CREAM STUFFED PANETTONE

INGREDIENTS

- 1 Kg Panettone (the one with candied fruit)

- 1 Lt vanilla or mint flavor  ice cream

- 200 gr dark chocolate chunks (70% cacao )

- Candied cherries or Christmas sprinkles(for decoration)

- Mint sprigs (for decoration)

- Piece of string or thread about 1mt long. 

PREPARATION

First, remove the Panettone paper liner carefully.

Next, cut the top of the Panettone with a serrated knife (making like). Save this “lid” aside. Now, remove the center of the Panettone, leaving just 1 inch frame around and at the base, so you will have like a bowl of Panettone now. Discard the rest or save for other use. At this moment, thaw the ice cream in the microwave for 1 min, that way it will be easier to manipulate. Now, fill the Panettone with the ice cream, using a spoon. 

Finally, cover with the Panettone top and take the freezer for the ice cream to set, approx 2 hrs. 

Meanwhile, melt 200 gr of chocolate chunks in the microwave for 1 min, remove from the microwave and mix until it is all melted and smooth. Then pour the melted chocolate over the Panettone, take to the freezer until you are ready to serve. Let it thaw for 10’ before serving. Decorate and take to the table.

TIPS

- It is better to freeze the ice cream to set well.

- You can prepare this dessert in advance and keep it in the freezer until needed.

- For the decoration you can use candied cherries or maraschino cherries and mint leaves. 

- For decoration you can also use Holiday color sprinkles: red, green, gold.
