PURPLE RICE
INGREDIENTS
- 2 cups pitted black olives
- 2 cups basmati rice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon salt
- 1 tablespoon garlic powder
- 2 cups filtered water (1/2 cup to blend olives and 1 ½ cups for rice)
- 125 gr cooked bacon bits
- ¼ cup black raisins
- ¼ teaspoon chili flakes
- ¼ cup red pepper in julienne
PREPARATION
First, wash 2 cups of basmati rice to remove starch until the water is clear. Then we prepare the olive cream: in a blender place 2 cups of pitted black olives, 1/2 cup filtered water and blend until you obtain an even creamy like sauce.
On the other hand, turn on the rice cooker, add 2 tablespoons of extra virgin olive oil, 1 teaspoon salt, 1 tablespoon garlic powder and fry for a couple of minutes, then add 2 cups of pre-washed basmati rice, the black olive cream previously prepared, 1 1/2 cups of filtered water and cook for 15 minutes. Once it’s ready, add 125 gr of cooked bacon bits, ¼ cup of raisins, ½ teaspoon of chili flakes, ¼ cup of red pepper in julienne, mix well and cook for 5 minutes more. Then grain the rice carefully with a large fork to separate the grains. Finally, brush a small bowl with oil or butter, fill it with the purple rice, press with the back of a spoon, flip it on a plate and serve. Decorate with red pepper pieces, sliced olives, raisins, finely chopped parsley, and It’s ready!

TIPS:
Toast the bacon in pieces without oil.
You can serve with fish, grilled shrimps or any seafood of your preference.
Also, you can serve with boiled eggs or fresh salad.
Blend the olives until you obtain a smooth cream.
