CITRUS TURKEY

INGREDIENTS

- 1 whole 7 kg turkey

- 2 minced onions 

- 1 lime juice (2 tbsp)

- 8 tablespoons olive oil 

- 1 tablespoon coarse sea salt 

- 1 teaspoon ground black pepper

- 1 teaspoon ground cumin 

- 1 1/2 teaspoon garlic powder 

- 1 teaspoon paprika powder

- Dash of nutmeg 

- 1/8 teaspoon ground cloves 

- 1/4 teaspoon ginger powder 

- 1/2 cup balsamic vinegar 

- 4 large apples peeled and in cubes

- 2 whole peaches

- 1 cup pineapple in cubes 

- 1/2 cup fresh orange juice

IMPLEMENTS

-  Aluminium foil

- Kitchen scissors

- Cotton String to tie the turkey’s legs

- Ovenproof Thermometer

- Ovenproof gloves

- Toothpicks or metal pins (special for turkey)

PREPARATION

First, with the kitchen scissors, remove the fat of the turkey or parts we don’t need, we could find some parts like the heart, neck inside the turkey so we have to check and  remove them as well.

Once we finish cleaning the turkey, in a bowl prepare the dressing, place 2 minced onions, 8 tablespoon olive oil, 1 lemon juice, 1 tablespoon salt, 1 teaspoon ground black pepper, 1 teaspoon cumin, 1 1/2 teaspoon garlic powder, 1 teaspoon paprika powder, a dash of nutmeg, 1/8 teaspoon cloves, 1/4 teaspoon ginger powder, 1/2 cup balsamic vinegar and stir all together.

Start by covering our turkey with the  dressing all over it. In a separate bowl mix the apple and pineapple together , then introduce them in the interior of the turkey. Then close the turkey , pulling the skin and fastening it with the toothpicks (that way the filling stays inside during cooking).Tie the legs crossing them one over the other (like in yoga),this way they will remain in its place during cooking.

Now, lay the other two apples sliced all around the turkey and also the peaches . .  Now turn around the turkey because the dressing has to stay all over it, add two sprigs of rosemary just over the turkey, this will give a special aroma. 

Next, cover it with the aluminum foil , preheat the oven for 15 minutes at 350 °F, place the turkey in the middle of the oven and cook  checking after F 1 1/2 hours,  remove the turkey from  the oven, pour some of  the juices over the turkey, bathing it well to keep it moist (we can use an ovenproof thermometer to know  when it is cooked inside.

Return the turkey to the oven , but this time raise the temperature to 400 °F for 1 more hour, repeat the previous  process of bathing the turkey again, removing it from  the oven. 

Finally place the turkey back for 1/2 more hour but without  the aluminum foil. So it is ready !

TIPS

  • To avoid some parts to burn, cover them with a piece of aluminum foil.

  • Remove the fat of the turkey using kitchen scissors.

  • You can put the juice obtained from the turkey  in a  bowl on the side , like gravy.

  • Also you can use a strainer for the juices if you prefer it clearer.
