SWEET POTATO + MARSHMELLOW
INGREDIENTS:
- 3 sweet potatoes
- 1/4 cup brown sugar
- 1/4 cup orange juice
- 1/2 tablespoon lemon juice
- 3/4 teaspoon coarse sea salt
- 1/4 teaspoon ground cinnamon
- 70 gr unsalted butter
- 20 marshmallows
PREPARATION
We’ll use the rice cooker, place 3 sweet potatoes and cover with water, and cook for 30 minutes. To test , insert a fork in the sweet potato , it has to go in smoothly, when it is cooked.When it’s ready, put them in cold water and peel . Place them in a bowl and mash with a potato masher. Add 1/4 cup brown sugar, 1/4 cup orange juice, 1/2 tablespoon lemon juice, 3/4 teaspoon coarse sea salt, 1/4 teaspoon ground cinnamon, a dash of nutmeg, a dash of fresh ground black pepper, stir all together and add 70 gr unsalted butter, while it is warm , butter will melt easily.
Place the mix in an ovenproof bowl of 24 cm, grease the mold with butter to avoid sticking, Place 20 marshmallows approximately, separated from each other until melted.
Finally, preheat the oven at 350 °F for 15 minutes, place the dish in the center of the oven for 12 or until it has a golden color.

TIPS
You can use oil in spray if you don’t have butter spread on the bottom.
Is better to serve when it’s warm.
Mash the sweet potato when it is warm.
