PURÉ DE ESPINACA

INGREDIENTS

- ½ kg organic spinach 

- 2 cups filtered water 

- 1 kg yellow potatoes

- 2 tablespoons extra virgin olive oil 

- 1 tablespoon minced garlic 

- 80 gr unsalted butter 

- ½ teaspoon salt 

- ¾ cup of evaporated lowfat milk 

PREPARATION

First, wash and cut ½ kg of spinach without the stems, place in the blender,  add 2 cups filtered water and blend together until it becomes creamy with  a thick texture. Wash 1 kg yellow potatoes, cook for approximately 15 minutes, then peel the potatoes and mash them, reserve aside.

In a pot over high heat add 2 tablespoons  olive oil and 1 tablespoon minced garlic, stir fry, add 80 gr unsalted butter, stir until the butter is melted, then add the spinach cream previously prepared, cook for 5 more minutes until it is boiling (bubbly) and add the mashed potatoes, stir again, add ½ teaspoon  salt and 3/4 cup  evaporated milk, stir and when it starts to boil again (bubbly) it is ready!! You can serve with cooked white rice and boiled egg.

TIP

  • You can buy pre-washed spinach in the supermarket.

  • You should stir constantly to avoid splattering and burning at the bottom.

  • It is preferable to peel the potatoes while they are still hot , it is easier.

  • You can also serve with fried egg, sunny side , it is delicious.
