ARROZ CHAUFA
INGREDIENTS
- 4 tablespoons extra virgin olive oil
- 1 teaspoon salt
- 2 teaspoons garlic powder
- 3 cups white rice
- 3 cups filtered water
- 1 bunch green onion
- 1 piece ginger
- 2 eggs
- 350 gr chicken breast in cubes
- 1 ½ tablespoon soy sauce
- ½ teaspoon sesame oil
PREPARATION
First, wash 3 cups of white rice until the water runs clear and the starch is removed. In the rice cooker add 2 tablespoons extra virgin olive oil, 1 teaspoon salt and 2 teaspoons garlic powder, stirfry and add the rice, 3 cups filtered water, mix and turn on the rice cooker.
On the other hand, we’ll prepare the mise en place: wash 1 bunch green onions, remove the tops, the roots and any part which is not nice. Peel and finely chop 1 piece of ginger, beat 2 eggs and fry (like scrambled eggs) . Set aside. In a hot pan with 1 tablespoon olive oil cook 350 gr of chicken breast in cubes, once it is done, add the chopped green onions and the minced ginger, reserve aside.
Once the rice is ready, grain with a large fork and add the ingredients previously prepared, 1 ½ tablespoon soy sauce, ½ teaspoon sesame oil and mix, serve in a small bowl.

TIP
- Cookthe green onions only for 1 minute, that way we keep its crunchiness.
- It's important to grain the rice very well.
- For a vegetarian option you can replace the chicken by grilled tofu or mushrooms.
