GERMAN POTATO SALAD

INGREDIENTS

- 680 gr small potatoes

- 1 ½ lt filtered water 

- 2 ½ tablespoons extra virgin olive oil 

- ½ tablespoon dijon mustard 

- ½ tablespoon dried onion 

- ½ cup cooked  bacon bits

- ¼ cup  sweet relish 

- Dash of ground black pepper 

- Pickle to decorate 

PREPARATION

In a pot, place 1 ½ liters  filtered water and 680 gr of small potatoes on high heat for 15 minutes. After this time check if it’s cooked by introducing a fork, drain and cut in bite sized   pieces. On the other hand, we will prepare the dressing:in a small bowl, add 2 ½ tablespoons  extra virgin olive oil, ½ tablespoon  dijon mustard, ½ tablespoon  dried onion powder and beat to mix everything, add ½ cup cooked  bacon bits, ¼ cup sweet relish, a dash of ground black pepper and mix. Decorate with pickles.

TIPS:

  • Cook the chopped bacon in a pan on low heat without oil.

  • Serve this salad warm .

  • Serve with meatloaf, lamb shanks or sausage for better pairing.
