CANCHA MOTE
INGREDIENTS
- 1 cup mote corn
- 1 tablespoon oil
- Dash of salt
PREPARATION
Place the pot to heat on high heat, when it is hot we add the corn and start stirring with a wooden spoon.
As soon as we feel that the corn is starting to heat up (you can feel it by bringing your hand a little closer, being careful not to burn yourself), then lower the heat to medium.
Keep stirring with the wooden spoon and when the corn kernels start to pop, cover it so it doesn't splatter.
Then, you can see that they start to brown and smell toasted and that is when you remove it from the heat and turn off the fire.
Empty it into a clay pot or a serving bowl, add a little salt to taste, stir and that's it!

TIP
Use gloves when you shake the pot.
The pot has to be very hot, then when you cook turn down the heat.
It is very important to lower the heat when corn starts to warm up, otherwise they can burn quickly.
It is preferable to use a pot with a thick bottom.
