LAMB SHANKS
INGREDIENTS
- 3 lamb shanks
- 2 tablespoons of extra virgin olive oil
- 2 chopped onions
- 1 chopped clove garlic
- ¼ tablespoon thyme
- ½ tablespoon ground oregano
- 1 teaspoon fennel seed
- ½ tablespoon paprika
- ½ cup chicken broth
- ¼ cup vinegar
- ¾ cup tomato paste
- Sprig of rosemary
- Dash of coarse salt
- Dash of black ground pepper

BAKING TIME: 130 MIN
PREPARATION
We start by seasoning the lamb shanks with coarse salt and pepper. Heat 2 tablespoons olive oil in a pan, seal the meat on both sides, once it’s ready remove and place in an ovenproof dish. Next, we will add 2 chopped onions to the same pan we have just used for the lamb, just leave them there until they are golden brown, add ¼ tablespoon of thyme, ½ tablespoon of oregano, 1 teaspoon of fennel seeds, ½ tablespoon of paprika, ½ cup chicken broth, add ¼ cup of vinegar and ¾ cup of tomato paste, mix all together, cook for a few minutes. Once it’s ready, add this mix on top of the lamb shanks and one sprig of rosemary, cover with a aluminum foil and bake at 300°F for 1 hour, after this time turn the lamb shanks and with a help of a spoon pour the juices over the lamb, cover and cook for 1 more hour, after this time turn the lambs shanks again, pour the juices over the meat again and cook for 10 more minutes uncovered, it’s ready!

TIPS
You can pair this dish with mashed potatoes, salad or white rice.
You can use homemade tomato paste as well.
Use heat resistant gloves to remove the dish from the oven.
REmember to uncover the lamb for the last 10’ as it will help to give it a browned top.
