PERUVIAN POTATO SALAD

INGREDIENTS

- 680 gr potatoes (Yukon Gold, Red or Russet )

- 2 liters filtered water 

- ½ cup greek yoghurt (unflavored and unsweetened)

- 3 tablespoons olive oil

- 1 tablespoon lime juice

- ½ cup chopped red onion in tiny pieces

- ½ cup chopped pickles 

- 1 tablespoon  finely chopped parsley

- Dash salt

- Dash pepper

PREPARATION

First, cook 680 gr potatoes and 2 liters of water for approximately 27 minutes. Once potatoes are cooked,  peel and cut them in cubes.

On the other hand, we are going to prepare the salad dressing: in a bowl place ½ cup greek yoghurt, 3 tablespoons olive oil, 1 tablespoon lime juice, a dash of salt and pepper.

Finally, in a bowl put everything together: potatoes, 1/2 cup finely chopped onion, ½ cup of chopped pickles, the dressing and 1 tablespoon finely chopped parsley, mix well and it’s ready!

You can serve with chicken, lamb shanks or beef sirloin.

TIPS

  • If you use yellow potatoes, don´t mix too much because they are more delicate.

  • Let the potatoes cool a little bit before adding the dressing
