PARSNIP PUREE

INGREDIENTS

- 450 grs parsnip

- 350 grs white potatoes 

- 250 ml filtered water (just to cover the potatoes and parsnips)

- 2 tablespoons unsalted butter 

- 1 teaspoon salt 

- Dash of pepper 

- ½ teaspoon powder garlic 

- 1 tablespoon sour cream 

- ½ teaspoon dry thyme 

- 3 tablespoons evaporated milk 

PREPARATION

First, wash and peel the vegetables and potatoes, chopped in medium cubes and cook in a pot or a rice cooker, add 1 cup filtered water. After a few minutes, (check first with a fork to see if they are cooked), remove and mash  the cooked potatoes and parsnips together, until there are no lumps. Then , add 2 tablespoons unsalted butter, 1 teaspoon salt, a dash of black ground pepper, 1⁄2 teaspoon garlic powder, 1 tablespoon sour cream, ½ teaspoon dry thyme and 3 tablespoons  evaporated milk. Stir everything together with a wooden spoon and cook for a couple more minutes until it starts bubbling . 

Now serve,  adding a dollop of cream and a dash of freshly ground pepper .

 TIPS

- You can accompany it with chicken or beef or some fresh salad. 

- You can press the parsnips and potatoes mixture with a large fork to make the puree.

- You can use the rice cooker to prepare this also.
