CORN & POTATO DISH
INGREDIENTS
- 1 1/2 kg white potato
- 3 tablespoon extra virgin olive oil
- 2 cups cooked white corn (equivalent to 3 corns)
- 2 whole eggs
- Dash of salt
- Dash of pepper

PREPARATION
Put the potatoes in the rice cooker, add water to cover the potatoes. Leave it to cook for approximately 20 minutes. After this time you can check if they are done, by inserting a fork in each potato. If you feel the fork go in easily, it is ready, otherwise you have to leave it cooked a little longer checking after 10’. Once they are cooked, you peel the potatoes, cut them into cubes and keep in a bowl.
Cook the corn kernels: put them in a heat resistant bowl, cover with water and microwave for 6 minutes, set aside.
Heat up a medium size pan, add 3 tablespoons of extra virgin olive oil, add the cubed potatoes, add the cooked corn kernels(without the water). Add 2 eggs, a dash of salt and pepper, mix everything together , remove from the stove and it is ready!

TIPS
You can cook the corn in a pot on the stove.
Preferably serve warm.
You can use it for breakfast, lunch or dinner.
