TOMATO SOUP BROTH
INGREDIENTS
- 500 gr roasted chicken
- 4 large round tomatoes
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- 1 liter cold water
- Dash of pepper
- Fresh basil
PREPARATION
First, place the roasted chicken in a pot with water and cook to obtain a broth. This will take approximately 35 minutes on high heat. Pour it all through a colander on a bowl and return the liquid back in the pot. Discard the rest. Again turn the heat on high to keep it boiling , you should have approx 1 liter of liquid. When boiling it will reduce a little, then add 4 tomatoes in medium size pieces, (for round tomatoes approx 8 pieces each) cook for 15 more minutes. Finally, add 1⁄2 teaspoon salt, 1⁄4 teaspoon garlic powder and a dash of pepper. Keep it boiling for 1 more minute, drain with a colander pressing the tomatoes with the back of a spoon, and serve in a nice cup! Garnish with some fresh basil leaves and crackers.

TIPS:
It is very important to add the salt at the end, otherwise it could turn salty when evaporated.
If you wish you can peel the tomatoes before adding them to the pot.
