AVOCADO SOUP

INGREDIENTS

- 500 gr ripe avocado (aprox)

- 670 ml boiling hot chicken broth (I used unsalted) 

- Dash of garlic powder 

- Dash of black ground pepper

- Dash of salt

- Dash of ground nutmeg

- 1 cup Croutons or

- 4 Dash of paprika or

- 4 teaspoons cream (35%)

PREPARATION

First, remove avocado flesh with the help of a spoon and place in the blender’s jar, add 670 ml of chicken broth, blend for 2 minutes. Then add a dash each: garlic powder, pepper, salt and nutmeg, blend together for 5 more seconds, it has to have the consistency of a smooth cream. Serve and add any of the toppings mentioned in the Ingredients’ list. I will  show you 3 options: the first with croutons, the second option with a dash of paprika as  it gives it a beautiful color combination and the third a small squirt of  cream. Now  it’s ready!

TIPS

  • Serve immediately as soon as it is ready, to avoid avocado’s oxidation.

  • Pour the broth through the lid’s chute and operate the blender covered to avoid splatters.

  • For a VEGAN/VEGETARIAN version, you can use Vegetable Broth and also Dairy free cream, and follow the instructions above.

  • If you don’t have a blender, your smoothie blender will also work as avocado is super soft.
