OLLUCO CON QUESO

INGREDIENTS

- 1 1/2 tablespoon vegetable oil

- 1/2 tablespoon salt

- 1/2 tablespoon minced garlic

- 1/4 cup finely chopped onion

- 1/2 cup cheese in cubes 

- 1 kg olluco

- 3/4 cup of filtered water 

- Dash of ground black pepper 

- Finely chopped parsley

PREP TIME: 50 MIN

PREPARATION

First wash 1kg  olluco under tap running water Next turn on the rice cooker and add 1/2 tablespoon vegetable oil,  1/2 tablespoon fine salt, 1/2 tablespoon minced garlic, 1/2 cup finely chopped red onion, fried for a few minutes until the onion is transparent, add 1kg of olluco, 3/4 cup of filtered water in 3 times, 1/4 cup when is a little dry and cook for 30 minutes, stir each 10 minutes, also add 1/2 cup of cheese in cubes in 2 times, before and in the last few minutes, when it’s ready (and ollucos are tender) you mash them with a potato masher, it will ressemble a rustic mashed potato.

Finally, add a dash of ground black Add some crushed black pepper and decorate with minced  parsley and it’s ready to serve!

TIPS

  • Wash the olluco and remove the parts that are not good to cook.
