LENTILS MY WAY
INGREDIENTS
- 1/2 kg green lentils
- 1 cup tomato sauce
- 3 tablespoon extra virgin olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground pepper
- 1 teaspoon salt
- 1 tablespoon balsamic vinegar
- Filtered water, just enough to cover the lentils.
PREPARATION
First we will check our lentils for little stones or impurities. Then we will wash them with clean water in a bowl, changing it three times, until the water is clear. When we have our lentils washed and cleaned, we will put them in the rice cooker, adding filtered water just enough so as to cover the lentils by one inch above the level. Turn on the rice cooker and cook it for 20 minutes. After 20 minutes, stir the lentils with a wooden spoon, from the bottom to the top, so that everything will cook equally. Continue cooking for 15 more minutes . After this time , we will know they are ready when we start seeing some lentils breaking apart. At this point we will add 1 cup of tomato sauce, 3 tablespoons of extra virgin olive oil, 1/2 teaspoon of garlic powder, 1/2 teaspoon of ground pepper, 1 teaspoon of salt and 1 tablespoon of balsamic vinegar, stir everything and finish cooking for 10 more minutes to blend all the flavors. Once it’s ready you can serve and accompany the dish with rice, tomato, avocado, fried egg, etc. depending on your preferences.

TIPS
Also you can use the stove to cook the lentils, but you should be careful enough to keep an eye on it, stirring it from time to time so it doesn’t stick to the bottom of the pot. Cook in medium heat as soon as it starts to boil.
