CARAMELIZED LAMB RIBS
INGREDIENTS
- 500 grs Lamb rib rack (butcherer clean)
- 1 piece ginger (1 tbsp)
- ¼ cup maple syrup
- ½ teaspoon dijon mustard
- 1 tablespoon unsalted butter
- 1 tablespoon extra virgin olive oil
- 2 sprigs fresh rosemary
- ¼ cup filtered water
- Dash of freshly ground black pepper
- Dash of coarse salt
PREPARATION
First, clean the rib bones with a little bit of water, dry and reserve. Add coarse salt and pepper on each side of the rib rack. In a bowl place the ginger, peeled and minced, melt 1 tbsp unsalted butter in the microwave for 30 seconds, then add it to the ginger mixture, ¼ de taza de miel de maple, ½ teaspoon dijon mustard and mix with a fork until it is smooth. Then pour it over the Lamb rack and leave it to rest for 20 minutes. After this time, cover each rib bone with aluminum foil so it won’t burn. Add 1 tablespoon extra virgin olive oil to a pan and warm in high heat, add the ribs’ rack and seal it on each side. Then add 2 sprigs of fresh rosemary to the pan and take to the preheated oven at 350 °F for 20 minutes. Finally, remove from the oven, turn around the ribs to the other side, add a little bit of water around it (¼ cup) and cook for 5 more minutes and it is ready!! Next, reduce the juices on the pan over the stove for a few minutes on high heat, this way it caramelizes, you will know it is ready because it will be thick like a syrup. Pour this “syrup” over the ribs, cut and serve.

TIPS:
- You can accompany it with mashed potatoes, baked potatoes or salad.
- It’s important to let the ribs sit on the seasoning at least 20 minutes before cooking to allow the flavors to integrate with the meat. You can leave it for a maximum of 1.5 hrs.
- Ask your butcherer to clean the ribs’ bones so it will look as shown in the video.
